Around our house, summer dinner is often a big, hearty salad. I love that salads can be easy to throw together and light on the stomach when it’s hot out. This delicious raw salad uses fruit, veggies, and a nut paté to mimic tuna salad!
I think this salad has been made more than any other salad in our house. A standard for entertaining, we love the combination of kale, cabbage, pecans and dried cranberries.
When I don’t have time to make actual spring rolls, this spring roll bowl packs in all the flavor with a lot less work. The “peanut” sauce is actually made from almonds. Delicious!
If you are a beet fan, you will love them combined with oranges and spiced walnuts. Thyme is the perfect spice to bring it all together.
This buddha bowl uses fresh tomatoes, corn, avocados and olives combined with quinoa to create a filling quinoa salad. You can’t go wrong here.
