- 4 Lemons (zest & juice)
- 4 Oranges (zest & juice)
- 4 T chia seeds
- Maple syrup (or agave/honey)
I am always trying to find ways to incorporate the goodness of chia seeds into my food intake and this is such a simple and yet tasty way. There are only 4 ingredients too which is an added bonus and the preparation time is minimal ……
Firstly, zest your lemons and oranges and place into a bowl…….
Then add the juice of your lemons and oranges and leave for a little while to help soften up the zest…..
Add your chia seeds and your maple syrup (I chose maple syrup as my sweetener to make the most of the caramel taste to mimic the caramel flavoring you have in normal marmalades….it works a treat.)
Leave the seeds to soak up the juice and gelatinize in the fridge for 20 minutes or so and mix well.
Taste, and add more sweetener if needed………. and there it is. I placed mine in glass jars and kept them in the fridge.

There are a few ways that I use this marmalade……..
………As you can see above, I spread it on my chosen fruit for breakfast………..
….. or a snack…..
I use it as a topping for my over night oats with or without additional fruits……..
……Or, I simply use it to dip my strawberries into!!!
